A great slow roaster. Marbled with great tasting fat, can be a little tricky to carve, but you’ll find it well worth the work.

Used in Mediterranean cooking for a kleftiko, sliced with the bone in and slow cooked with lemon and vegetables. Succulent and full of flavour!
